Lemon Poppyseed Bread

Lemon Poppyseed Bread 
A health(ier) alternative to a delicious bread. 

Lemon Poppyseed Bread
1/4 C coconut or olive oil
1/2 C honey
2 eggs
Zest of two lemons*
1 t vanilla
2 3/4 C whole wheat flour
1/2 t salt
3/4 t baking powder
1 3/4 t soda
1 1/2 T poppy seeds
1 1/2 C sour cream

Mix the first 3 ingredients, stir in the next two. Combine the dry ingredients. Alternate between mixing the dry ingredients and the sour cream into the wet ingredients. Bake and 325 in a well oiled loaf pan for about one and a half hours our until knife comes out clean.
