Borscht

I don’t know how authentic this is. I’ve never been to Russia. But, I do know it is good. It’s actually a great summer dish because most of the ingredients you can get a the farmer’s market throughout the summer (at least here in Kansas) and it is just as good cold as hot.

Borscht
3 beets, shredded
3 carrots diced
2 stalks celery, diced (optional and not authentic)
dill weed to taste
salt and pepper to taste
garlic to taste
1 onion diced
1 medium head cabbage, shredded
1 can tomato paste
4-5 potatoes, diced
Chicken stock
Cook cabbage, beets, and potatoes in stalk. Sauté celery, garlic, carrot, and onion. Add to pot and simmer 5 minutes more. Add paste and seasonings. Serve with sour cream. Serve cold or hot.
Last time I made this something in it was a little bitter (maybe the celery) so I added a tiny bit of honey. Update: I rarely sauté the onions and carrots if making this in the summer I just throw it all together and let it cook. 
One benefit of making this is you can do this. And yes, it is me.
