Tex-Mex Chicken Soup

I was thinking of this recipe this morning. I really enjoy this soup! It has several canned ingredients which I definitely do not think ideal, but the taste is quite good and it is really quick to throw together.

Taco Soup -serves 6-8

8 cups stock (I like chicken)
3-4 cups shredded chicken
1/2 onion, diced
3 cups cooked pinto beans
2 cups cooked black beans
3 cans tomatoes and chiles
3 cups frozen corn
1 can chopped olives
juice of 1/2 lime
1 T taco seasoning
2 cloves garlic
2 t dill weed
2 T parsley
salt and pepper, to taste

Cook the onion and some butter in the bottom of a stock pot. Add the rest of ingredients. Heat through. Serve with avocado, fresh tomato, and green onions.
