Homemade Coconut Milk

I love using coconut milk, but I don’t always have it on hand and it can get expensive. Here is a simple recipe for making it at home.

You will need:

A blender – stick or stand
Cheesecloth

1 Cup dried coconut
About 2 Cups of water

Put the water on to boil. When it is hot add the coconut and one cup of the water to the blender. Blend for several minutes. The coconut will be finely chopped and the water a milky color. Drain through two layers of cheesecloth. Put the coconut BACK into the blender add 3/4 cup hot water and blend again. Drain. Squeeze out the excess water (it will be hot but if it is too hot to hand you probably didn’t blend it enough :D).

  1. Sorry for being dense, but….1 cup coconut- like, can you use dried? Or do you need coconut meat from a fresh coconut? First recipe I’ve seen for making coconut milk, and it looks like something that would be awesome to try! :-)
